Lakefield's Hard Winter Bread Company Launches Custom Built Mobile, Wood-Fired Bagel Oven

The Lakefield-based sourdough bakery Hard Winter Bread Company has announced it will now be adding delicious Montreal-style bagels to their market tables this spring.

The company—which is run by couple Graham Thoem and Jessica Arsenault—prides itself on creating simple, healthy foods using quality ingredients. They will be baking the fresh bagels on-site at markets in the Kawarthas in their new custom built, mobile wood-fired oven.

“Our time living in Montreal is when we understood the makings of a perfect bagel," says co-owner Graham Thoem. “They need to be handmade, and they must be wood-fired. When it comes to the texture, flavour and authenticity, a live wood fire is the secret to a truly Montreal-style bagel.”

Co-owner Jessica Arsenault adds that the expansion will be part production, part performance. "Customers will find us rolling, boiling and baking bagels right on site at markets," she says.

For the expansion into mobile production, the couple enlisted the help of world-renowned mason and oven-builder, Alex Chernov, from Stovemaster in Orangeville.

Beginning Saturday, May 13th, customers can find Hard Winter Bagels at the Peterborough Farmers’ Market until October. They will also be available at the weekly Lakefield Farmers’ Market.

The helicopter landed with permission next to Muddy's—which just re-opened for the season—in Keene so they could enjoy some authentic Southern style food (Muddy's specializes in ribs, brisket and pulled pork).

Peterborough-Based Chimp Treats Will Have Product Line In Whole Foods Stores Across Ontario

Brooke Hammer

Peterborough-based company Chimp Treats has announced their Nicecream line of products will soon be available on the shelves of Whole Foods.

Whole Foods—known for their natural and organic food options—makes for a perfect match with the single ingredient fruit ice cream 22-year-old entrepreneur Brooke Hammer has created with Nicecream. Chimp Treats will also be introducing two brand new flavours to the mix, Mango Banana and Strawberry Banana.

As the founder of Chimp Treats, Hammer came up with the idea of taking a popular recipe she was making in her home (an ice cream made entirely from bananas) and bringing it to grocery store shelves everywhere.

As a varsity athlete and Trent University student, she put her company ideas to action and added entrepreneur to the list, developing the process to make it all possible. She launched Chimp Treats in June 2016. She currently operates her business full time in the Innovation Cluster’s downtown Cube, Peterborough’s innovation incubator.

Chimp Treat's products are currently on shelves in Toronto, Peterborough and the surrounding area including Sobeys, JoAnne's Place, Fiesta Farms and Foodland. Now, Chimp Treats is excited to expand its signature product to the Whole Foods organization, showing that eating healthy can also be a treat.

Calorie Tallies Will Now Appear On Menus At Approximately 80 Local Food Premises

Local residents will now be able to make more informed food decisions at certain food premises thanks to Ontario’s new “Healthy Menu Choices Act” that took effect January 1, 2017.

The new legislation only affects food service providers with 20 or more locations in the province. This means calorie tallies will now be seen on menus at approximately 80 local food premises, according to Peterborough Public Health.

EASIER TO GET CALORIE INFORMATION NOW

“More and more people are paying close attention to what they are eating, so providing this calorie information is one way to encourage healthier food choices,” says Dr. Rosana Salvaterra, Medical Officer of Health. “For those who aren’t aware of how many calories are in certain foods, providing this information directly on the menu will help them better understand how to balance out their caloric intake throughout the day.”

Residents will now see the number of calories for each food and beverage item included on the menus, labels or tags at several local food service providers, such as restaurants, coffee shops, convenience stores, grocery stores and movie theatres.

Food service providers are also required to post an educational statement for customers about average daily caloric needs. For an updated list of local food premises affected by the legislation, visit peterboroughpublichealth.ca.
